Gazpacho
1 bottle of Granny Blossom's Bloody Mary Mix (32oz)
1 Cup chopped or diced cucumbers
1 Cup chopped or diced onions
1 cup chopped or diced green pepper
1/2 cup diced or shredded carrots
Place all ingredients in a large bowl, gradually stir in 1/2 cup olive oil, Chill for 4 hours. Serve in a soup bowl, garnish with chopped parsley and chopped chives.
Place a spoonful of sour cream or yogurt as desired. Serves 10.
A great hot weather meal and a wonderful time of year to prepare, with all the fresh vegetables in the garden and at your favorite farm store. It is a quick and easy gourmet treat.
